The wine cellar is located in the Quinta de Paços, close to the vineyard. The grapes are hand harvested, destemmed, and part of them are submitted to pellicular maceration for five hour, with temperature control. After being decanted the must is fermented in stainless steel at low temperature and the wine stays on top of the slim lees with "batonnage" until bottling.

Nell Phillips: One of the real surprises of the Viniportugal tasting was finding a Fernão Pires from Minho because typically this variety is planted further south in Tejo and Bairrada. Quinta de Paços grafted some Fernão Pires in 2003 and the results are exciting. Its Fernão Pires 2010 has aromas of pear drops and boiled sweets, in one appealing, easy drinking, full-flavoured style, nicely balanced by crisp acidity.
